Tempus Two Pewter Pack - The Wines
Sparkling Pinot Chardonnay
The 2005 Pinot Chardonnay Pewter label from Tempus Two is a beautifully presented and sought-after wine.
Aroma:
The complex blend of stone and citrus fruits are complimented by warm biscuity, creamy characters.
Palate:
A complex-bodied sparkling with a fine bead. Vibrant fruit flavours of apple and white peach have been complexed by a supple creaminess from yeast autolysis.
Overview:
Following on in the tradition of champagne, this wine is created using the varieties of pinot noir, chardonnay and pinot meunier.
This premium and bottle fermented sparkling wine with
intense varietal aromas and flavours is made from fruit
sourced from premium vineyard sites throughout South
Australia and the cooler climates of Victoria.

Developed, lifted, honeyed melon aromas lead to a lip-smacking and complex palate loaded with honeyed citrus rind, lychees and dried apricot flavours seamlessly balanced with citrus-like acid
Aroma:
Preserved apricots and candied citrus marmalade with hints of wild honey.
Palate:
Powerfully rich and opulent displaying the quintessence of botrytis semillon. The flavours of dried apricots, citrus fruit marmalade and underlined by a subtle touch of wild honey. The wine displays restrained acidity ending with a refreshing citrus lift, balanced by the concentration of flavours that give overall elegance and finesse.
Overview:
Botrytis Cinerea is known as the “noble” rot, a fungal infection causing, amongst other things, dehydration and concentration of juice within the infected grape.
The natural sugar levels therefore increase and the grapes are harvested late to fully capture the intensity of sweetness and complex favours.

Tempus Two Copper Pack - The Wines
2005 Cabernet Merlot
Aroma:
Cassis, plum, liquorice with hints of fresh tobacco, spearmint and spice.
Palate:
A concentrated wine with flavours of blackcurrant, chocolate and mint. The fine tannin structure, subtle oak flavours and succulent fruit finish have given rise to a premium wine with great length, depth and persistence.
Overview:
The cabernet sauvignon for this wine was sourced from our favourite vineyard in the Barossa Valley, Vine Vale, renowned for producing full-bodied, beautifully concentrated, red wines.
It has been blended with premium merlot from the Langhorne Creek region, and crushed and chilled onto a ‘must’ tanker and transported to the Hunter Valley for vinification. This rich and flavoursome blend was matured in new and seasoned French oak barriques for 16-months to capture and enhance the complexities of these
two varieties.
2006 Wilde Chardonnay
Aroma:
A complex, rich, Burgundian style nose displaying stone fruit, citrus and apple aromas. This is enriched by wild yeast barrel ferment characters and cheesy, biscuity hints from lees stirring.
Palate:
A luscious, full-bodied chardonnay with layers of flavours, enhanced by a lemon zesty acidity which gives line and length to the wine.
Overview:
We have drawn upon ‘Old World’ influences in the making of this wine and believe it exhibits the ultimate in style and substance. The old vine chardonnay fruit from the
famous Richmond Grove vineyard in the Upper Hunter Valley has been enhanced by the addition of fruit from our new plantings in the Adelaide Hills, an exciting new region for exceptional chardonnay.
Pristine fruit was harvested cool, crushed, pressed and the cloudy juice transferred to a selection of French oak barriques. The barriques were never inoculated, allowing a wild fermentation to occur. This imparts distinctive aromas
and flavours to the wine. Maturation on lees in barrique for nine months, in combination with batonage, before strict barrel selection for blending has resulted in this premium wine of very limited quantity.
